Many people overlook the greatness of celery because it is often partnered with the amazing carrot. However, it is time to let celery take the spotlight for once. At only 16 calories a cup, celery is an excellent vegetable for filling up on fiber and nutrients while on a diet. Not only that, but the antioxidants and polysaccharides in celery make it excellent for fighting inflammation in the joints and soothing irritable bowel syndrome.
Fresh celery is also high in vitamin K, which you were introduced to earlier. Vitamin K can increase bone mass, build brain cells, and even limits neuronal damage caused by Alzheimer’s. Celery and celery seed also contains apigenin, an anti-inflammatory that works directly in the brain.
