Pick up something that you know that you will, on some level, learn something from. Challenge yourself with content that you never knew. Delve into mysteries you never were able to find answers to.
That allotted 60 minutes will seem a lot shorter than it is once you find the book, journal, newspaper story, or even graphic novel that entrances you.
