Take a break from butter
When entertaining during the holidays, you can prepare delicious foods without using butter. You can even give the mash potato a butter break! On the surface, this may sound like a no, no, but note that you can use the starchy water from boiling the potatoes as an alternative to butter for creaming the mash. Add skim milk, fat-free sour cream, plain fat-free yogurt, pureed cauliflower, or low-fat turkey or chicken broth for a creamier, fluffier texture. Don’t forget to sprinkle on the roasted garlic and herbs and a teaspoon of olive oil for extra flavors. Your guests may not even notice the butter is missing while they’re savoring the flavor of mash that is richer in proteins and healthy fats.
