Much like carrots and tomatoes, mushrooms are incredibly high in antioxidants that fight off disease. The nutrient that makes mushrooms a star is selenium, because the mineral is hardly found anywhere else in fruits and vegetables. Selenium plays a crucial role in liver and enzyme function, as well as detoxifying carcinogens. It was also found that selenium can prevent inflammation and slows tumor growth rates. Mushrooms also contain vitamin D and folate, two nutrients that inhibit the growth of cancer cells.
