Teff

Teff is produced mostly in Ethiopia and Eritrea. It has been cultivated in these countries for thousands of years. Even though it might be the smallest of the grains, it is packed full of nutrients like iron and calcium. Most often brown in colour, teff is often cooked like rice or quinoa and made into a porridge like dish. Since it is so small it cooks quickly.

Aside from being available as a whole grain, Teff can be found in flour form and is often used to make breads and other foods.
