Although there has been a lot of talk in recent years when it comes to corn, many still agree that it is a good gluten-free alternative. Corn, a grain and not a vegetable contrary to popular belief can be found in a variety of forms including on the cob, in a can, or frozen. It can also be made into cornmeal, corn flour or polenta (essentially boiled cornmeal).
When buying corn products it is important to look for “whole grain corn” as corn that has been degermed does not have the same health and nutritional benefits.
