Hard Cheeses
Finding cheese that has been waxed is not exactly easy to find but are out there. You can find cases of Parmesan, Swiss, sharp cheddar, and Gouda varieties encased in wax in most supermarkets or specialty stores. Wax is the important component in keeping cheese, because it prevents bacteria spread and mold growth. Hard cheeses kept in wax can keep for up to 25 years in most cases.
If you can’t find waxed cheeses, there are plenty of pasteurized cheeses with long shelf lives. Parmesan cheese, for example, is easy to store. However, it can usually only be kept for about 6 months before it starts to spoil.
