Dried Fruit and Fruit Leathers
Since fresh fruit is bound to ripen and rot in the blink of an eye, you are going to have to rely on dehydrated fruit and fruit strips or leathers. That doesn’t mean you can’t make a bunch of delicious foods either. Dried berries, mangoes, bananas, pineapple, and apples can be used in dozens of recipes just like fresh fruit. Most of the time, if you buy organic and minimally processed dehydrated fruit, you can even rehydrate it in oatmeal and breads. Dried fruits can also be added to trail mix.
One of the best dried fruits would be raisins. A single serving of raisins comes packed with vitamin C, iron, fiber, and protein. They are also chock full of antioxidants to fight off illness.
Go organic with fruit strips and ropes, since most are loaded with sugar or high fructose corn syrups. You can also make your own fruit roll-ups at home with half the ingredients for a low price. It can also be a fun family activity to bring everyone together during difficult times.
